In any spare time I that I might have, I really enjoy being in the kitchen. I know it's strange for a career woman to also enjoy cooking, but I am guilty of such enjoyment. Now, let me just say that I really have a hard time following recipes. I mostly like the challenge of being faced with the ever approaching dinner hour, and with that, being able to create a colorful and flavorful meal, quickly, without all of the fuss.


In order to make food quickly, you have to keep some good staples on hand in your refrigerator and pantry. This weekend post is about one of my favorites, homemade almond butter.
HOMEMADE ALMOND BUTTER.
Ingredients & Tools:
-4 cups of raw almonds
-food processor
-empty jar/container
How To Make It:
Step 1. Pour just 2 of the 4 cups of almonds into your food processor. It works best with half the amount of almonds at a time.


Step 2. Turn on your processor. Let it run for about 3 min, and scrape the sides, repeat. These pictures are to give you an idea of where you are in the processing of your butter. Hang in there, just keep processing until it looks like the final picture.

Warning: DO NOT LICK YOUR COMPUTER SCREEN. This is what it looks like when it is done, so yum.

* A note about almond butter: Some people like to roast their almonds in the oven first. This is an option, but I encourage you to try it raw first. The fresh crushed raw almond taste is quite delicious.
